Asian Style Sweet & Sour Pineapple Tofu

Asian Style Sweet & Sour Pineapple Tofu
Vegan & Gluten Free
Serves 4
 

Ingredients

Veggies
2 C fresh pineapple
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
½ white onion
1 Tbsp vegetable oil
 
Tofu
1 block extra firm tofu
1 ½ Tbsp oil
1 Tbsp starch
1 Tbsp flour
 
Sweet & Sour Sauce
3 Tbsp wheat-free tamari
3 Tbsp sugar
2 Tbsp apple cider vinegar
3 cloves of garlic, minced
1 Tbsp ginger, minced
½ lime, juiced
1 Tbsp of agave nectar
1 Tbsp rice wine vinegar
1 Tbsp starch
1 tsp Sriracha
1 tsp salt
 
Rice
2 C white rice
¼ tsp salt

Top with toasted sesame seeds

Directions

  1. To prep, begin by chopping the veggies and pineapple into 1-inch pieces and set aside. Next, thoroughly drain the tofu and cut into 1-inch cubes. Lightly toss with the starch and flour and let sit for a few minutes. Meanwhile, whisk the ingredients for the sweet and sour sauce together and set aside.
  2. Cook the rice according to the instructions on the box.
  3. Place a non-stick pan on high heat and add the 1 ½ Tbsp of oil. Once hot, carefully place the tofu in the pan and let each side sauté until golden-brown edges form and the outer layer becomes crispy (about 7-10 minutes). Once done, turn off heat and set the pan of tofu aside.
  4. Using a medium-large pot, add 1 Tbsp of vegetable oil and set to high heat. Lightly sauté the veggies and pineapple until partly softened (5-7 minutes). After, add in the pan of crispy tofu cubes (with leftover oil) and lightly toss.
  5. Next, add in the sauce and toss everything for about 5 minutes on high heat. The sauce should begin to thicken because of the starch. Turn off heat once ready. Serve on rice and top with toasted sesame seeds. Enjoy!
