Strawberry Date Jam

Did you know that a study in the American Journal of Clinical Nutrition found that those living with Type 2 Diabetes had better outcomes when trying to prevent and reverse their symptoms by including dates into their diet? It is a great source of trace minerals, vitamins and fiber.

(24 Servings) 

Ingredients:
  • 2 Cups of Pitted Dates
  • 2 Cups of Strawberries (Fresh or Frozen)
  • 3 tbsp of Chia Seed
  • 2½ Cup of Filtered Water
Directions:
  1. Boil at least 2 cups of filtered water. 
  2. Put dates in a bowl and pour the boiling water over them until they are covered. Once the outer skin is curled up (1-2 minutes), drain the water and add to a blender.
  3. Add the strawberries, chia seed and ½ cup of water into the blender and blend until smooth.
  4. Place into a jar or glass food container. 

Note: Jam will keep in the fridge for at least 4 weeks.
